Acrescente a marinada reservada, mexa bem e deixe cozinhar durante 30 minutos. Acrescente as batatas fritas e envolva tudo delicadamente. Remove the pork from the marinade, keeping the liquid aside, and fry it in the pan until golden brown. Pour in the reserved marinade, stir well, and let the pork cook for about 30 minutes. Meanwhile, peel the potatoes and cut them into cubes. Heat the oil in a deep pan and fry the potatoes until they are crispy and golden. Remove them from the oil and drain on paper towels. In another pan, heat the olive oil and add the chopped garlic, letting it cook until fragrant. Add the shrimp, season with salt and pepper, and sauté until pink and fully cooked. Once the shrimp is ready, combine it with the pork, stirring well to blend all the flavors. Add the fried potatoes and gently mix everything together. Sprinkle with chopped parsley and give it a final stir. Arrange the dish on a serving platter, garnish with lemon wedges, and top with black olives. Your Rojões à Pescador is now ready to serve—enjoy!
